Pumpkin Spice Muffins- Grain Free, Low Carb, Anti-Inflammatory

It’s that pumpkin spice time of year! Here’s my current fave:

Wet ingredients:

4 eggs

One 15 oz can of pureed pumpkin

1 cup sunflower seed butter

1 cup monk fruit sweetener

3/4 cup Swerve sweetener

1 Tablespoon Vanilla

Dry ingredients:

1 cup fine almond flour

1/4 cup ground flax seeds

1/4 cup coconut flour

1 heaping tablespoon Turmeric powder

2 teaspoons cinnamon powder

1 teaspoon ground ginger

1/4 tsp ground clove

1 teaspoon ground licorice root (optional)

1.5 teaspoons baking powder

Mix dry and wet ingredients together. Can top with cocoa nibs and pumpkin seeds. Bake in muffin tins at 350 degrees until done! (you will just have to test them- timing depends on size of muffin tins!)
