3 Eggs
1/2 cup Lakanto Monk Fruit Sweetener
2 carrots, grated
1/2 big apple, grated
2 teaspoons vanilla extract
2 teaspoons banana extract (optional)
2/3 cup melted coconut oil
Mix together these first 7 ingredients. In a separate bowl mix together the next 13 dry ingredients.
1 cup finely ground almond flour
2 Tablespoons flax meal- healthy omega 3 fatty acids, lignans, and fibers that feed the microbiota
2 Tablespoons collagen peptides (I use Vital Proteins brand)- adds some easily absorbed protein
2 Tablespoons psyllium husks- helps hold the muffins together and also adds good fiber content
2 Tablespoons coconut flour
2 Tablespoons ground turmeric- helps reduce inflammation and protect cells
2 teaspoons baking powder
1/2 teaspoon baking soda
1 Tablespoon ground cinnamon- helps with healthy blood sugar levels
1 teaspoon ground nutmeg
1 teaspoon sea salt
1/2 cup dried goji berries- (Learn about the health benefits of goji berries)
1 cup chopped walnuts
Combine wet and dry ingredients. Bake in muffin tins (I love tiny silicone muffin molds like this) at 350 degrees until they are lightly browned on top and cooked in the middle! If you are not sure, pop one out and try it!
